Why are my oatmeal cookies hard?

Cookies are one of the most popular desserts. They are often eaten with a cup of coffee in the morning or after dinner. But sometimes, they turn out to be hard and crunchy.

The reason why your oatmeal cookies are hard might be because you did not chill the dough or you baked them too long. If you are unsure, try chilling your cookie dough in the refrigerator for at least 30 minutes before baking your cookies.

What ingredient keeps cookies soft?

Flour plays its small but memorable role here by adding protein. This greatly improves the shelf life of your cookies and helps them retain softness. A standard all-purpose flour has medium protein content, which can be used with lesser quality substances in your cookie recipe to achieve medium texture. Cake flour has low protein and should be used for this purpose only to avoid compromising taste or texture.

Otherwise, the ingredients in the cookie dough can be responsible for the softness of a cookie. While some ingredients might make the cookie harder, others will help it stay soft. And baking soda is a common ingredient that is used to add flavor and tenderness to cookies. It reacts with the baking powder in the dough and creates carbon dioxide which helps to keep the cookies soft.

What makes a cookie crunchy or chewy?

The texture of a cookie is determined by how much time it spends in the oven and how long it cools down. The more time it spends in the oven, the crunchier it will be; the more time it takes to cool down after baking, the chewy it will be.

When comparing crunchy vs chewy cookies on a molecular level, there is no clear difference between them. Some factors that affect their final texture include: moisture content of dough during mixing; temperature of water used for mixing; amount of humidity in oven; speed at which they are baked; size of cookie cutters .
